Recipe of the Week: Light General Tso’s Chicken

​Chinese food takeout is one of my favorite things to eat. Sadly though I tend to eat way too much and it pushing up my calorie. Every once and awhile this is fine but I crave it pretty often so I needed to come up with something.

I have tried other recipes for General Tso’s chicken but they did not live up to the hype. This one however is both delicious and nutritious. This is one of the few recipes that had a crunch on the outside without frying and was actually a bit spicy (though I’m trying to get it spicier)

It is also pretty easy to make with very little skill needed to make. Pair it with some rice and broccoli and you got meals on your hands!

Cooks 4 servings

INGREDIENTS:

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch chunk
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups crushed Corn Flakes or Breadcrumbs 

FOR THE SAUCE

  • 1 1/2 cups chicken broth
  • 1/4 cup hoisin sauce
  • 1/4 cup rice vinegar
  • 3 tablespoons reduced sodium soy sauce
  • 3 tablespoon brown sugar, packed
  • 2 tablespoons cornstarch


DIRECTIONS:

  1. Preheat oven to 450 degrees F. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside.
  2. Working in batches, dredge chicken in flour, dip into eggs, then dredge in crushed Corn Flakes, pressing to coat.
  3. Place onto prepared baking sheet and coat with nonstick spray. Place into oven and bake until golden brown and crisp, about 13-15 minutes.
  4. In a large saucepan over medium high heat, combine chicken broth, hoisin, rice vinegar, soy sauce, brown sugar and cornstarch until thickened, about 1-2 minutes. Stir in chicken and gently toss to combine.
  5. Serve immediately.
